Byron Burgers: Complete Elimination of Drain Issues

Byron is a British restaurant chain offering upmarket casual dining and one of the most popular gourmet burger restaurants on the UK high street. Founded in 2007, Byron operates multiple sites across the country. Two Byron sites installed Quintex's Biofix automatic grease management system after experiencing constant ongoing issues with FOGs (fats, oils, and grease deposits) in their drain systems.

The Challenge
Byron's sites were experiencing frequent drain blockages requiring six-weekly pump-outs. "FOG is an ongoing concern within the Casual Dining sector and something that must be managed with clear guidelines to avoid high reactive costs," said Richard Pratt, Head of Construction & Maintenance at Byron. After trialing a number of alternatives that still led to high amounts of callouts, Byron needed a solution that would eliminate drain issues entirely.
The Solution
Biofix automatic grease management system was installed at two sites. The system uses a unique blend of tailored, safe bacteria designed to consume FOGs and food particles in spore form. The bacteria digest the particles and convert them to CO₂ and water - meaning no by-products or risks for blockages downstream. Quintex provided a full turnkey solution, with experienced engineers installing the system in a few short hours, allowing the kitchen to experience limited downtime.
After 5 months of Biofix being installed, there was no need for manual pump-outs at either site. Zero reactive callouts were required - eliminating the six-weekly drain maintenance that was previously standard. The sites received positive feedback from the local authority.

Key Benefits
Byron extended the trial to a third site following the success at the initial two locations. The company is now looking at a phased rollout over the coming months.
